The summer holidays are finally here and I’m enjoying every second of it. Summer mean a lot of things: reading books, barbecues, traveling and so on. To me it also mean I can bake and I can bake a lot!
Spending all day in a hot kitchen may not be on top of your “to-do-list” but that’s the thing; baking is perfect for multi-tasking. Baking does not have to be time consuming and it certainly does not need to be complicated, even if you would like to bake bread (all you need is an oven, water, flour, salt and yeast/sourdough). While the dough is rising, take a swim, watch a movie or go for a run. With a little planning you can have fresh bread rolls for breakfast. Made by you, with good ingredients. The best of feelings!
And while you’re packing for a trip to the beach, why not bake a Spicy Cardamom Cake. It’s buttery, full of flavors and easy to make. I love cardamom (Elettaria cardamomum) for its intense sweet and kind of creamy flavor. For some reason, it’s a taste of summer.
This recipe is adapted from another of my favorite cook books, Rosendahls Trädgårdscafé, written by the ever so inspiring Monika Ahlberg.

Spicy Cardamom Cake
# 200 g organic butter
# 225 g organic caster sugar
# 3 organic, free range eggs
# 260 g organic plain flour
# 1 tsp organic baking powder
# 1 tbs freshly ground organic cardamom
# 100 ml of organic heavy cream
1. Set the oven for 175°.
2. Cream butter and sugar smooth and pale (5 min). Add the eggs, one at a time
3. Mix the flour with baking powder and cardamom. Alternate the flour mixture and the heavy cream into the bowl, starting and ending with the dry ingredients.
4. Pour the batter into a buttered cake pan (1,5–2 liters) and bake for approx. 40 minutes. Turn of the oven and let the cake sit for 15 minutes.
